Delectable mini molten chocolate cakes

Yum!! I saw this on Pinterest here and immediately knew it was on my list to bake! Ryan and I love the chocolate lava cake from chilis! Guilty! These are so far from healthy, but they are so delicious! At least I made the mini version, right? :)

Ingredients:
2tbs melted butter to prep pan
2 tbs coco to prep pan
3/4 cup butter
12 oz chocolate chips (I liked semi sweet)
1/2 cup heavy cream
5 eggs
3/4 cup sugar
2/3 cup flour

1. Prepare cupcake pan by coating each one with butter and cocoa. I just kinda swirled the butter around with the back of my spoon then did the same with coco.
2. For batter- place chocolate chips in a microwave bowl.
3. Add butter and cream on top.
4. Microwave in 30 second intervals (stirring between) until smooth
5. Let chocolate cool slightly
6. Add sugar, flour & eggs
7. Stir!
8. Pour into prepared cupcake pan
8. Let sit for at least one hour or up to a couple days!

Bake at 450 degrees for 10 minutes for a regular 12 pan cupcake size. Just until the outside has set. The top will not look quite done in the center. Check with a knife to see if a thick pudding consistency in center.

Let them cool for 5 minutes then place a flat cookie sheet on top. Time to flip! Invert the pan, mine fell out fairly easily. One or two needed a little help.

Serve with whipped cream or vanilla ice cream! I added some powdered sugar on top :)

Fill up each prepared cup! I filled all the way to top! It only puffed up a little.

See how the tops are a little dark? Baked, but not quite? I kept putting it in two minutes longer because I felt like it was not baked enough. Some of mine ended up not being pudding like in the center :/ they were still yummy though! so don’t worry! 10-12 minutes will do fine!

Flip them out of the pan and enjoy! I used a cheese grater to “sift” powder sugar on top to make them look pretty :)

My friend Allison and her boyfriend loved them! Mom, KK, & Ryan did also :) I will make these again! They are so convenient since they can be prepared the day before!

DIY jute and mason jar vase

Fresh cut flowers from our garden

I decided to make this simple “vase” with items I had around the house

Supplies:
Mason jar
Jute
Flowers

All I did was wrap the jute around the jar! I tried to make it neat and uniform at first. But I ditched that idea and began wrapping it in a random fashion. Love it!

I ended up giving this one to my mother in law :) looks like ill be making another one for me! I plan to place it on this shelf :

So cute to hang by our back door for keys, scarves, and dog leash! I saw on etsy that they drilled a circular hole to hold mason jar in place. I plan to get Ryan to do a little handy work for me! :)

So, I had a fantastic weekend in Houston, TX with some of my best friends, then I headed to Lafayette, LA for three days. I stayed at the Hilton garden inn in Lafayette.

Wonderful hotel with great staff! Bonus: cookies, tea, and coffee available in lobby. Unfortunately, no continental breakfast. But I survived ;) That’s one of my fav things about hotels!

I had an awesome time at the wound care class organized by LSU CON education department! The grant funded the program for Louisiana nursing home treatment nurses. Lets just say Louisiana’s pressure ratings are about as good as our obesity ratings. Which could have significant correlation? Anyway, the program’s objective is to improve outcomes. I learned lots and enjoyed all of it! Mrs. Jean was so awesome! She is a nurse practitioner that was the main presenter. David was a knowledgable speaker as well.

Great way to start the day! I had to buy instant oatmeal in the lobby, which I eat every morning at home. I decided to buy milk my last night for breakfast the following morning. It was frozen solid when I woke up :/ disappointing. They let me trade it out though. Thanks guys.

I donated a couple gifts to celebrate CNA week and show our appreciation to our staff. How cute is my forever 21 loot? Lip gloss, body lotion, & bags! Hope they like it :)

World market is one of my new favorite stores! I can’t believe I have never been to one. I could have walked out with quite a bit, but these are the treasures I went home with:

Champagne & strawberry dark chocolate
Tortellini soup mix
Caramel coffee (for Ryan)
Pesto mix (to try with spaghetti squash)
1 litre glass carafe ( how cute for sangria)

There is a rug I’m certainly going back for. And so many other things. That I may or may not need! ;)

Sun out, windows down, music up, singing slightly off key

For some reason our father daughter wedding song came on… Instant tear jerker! But I think some J.T. Immediately lifted my sprints.

It was a fantastic week! …. Now just have to survive state when they come to surprise us!

Oooh and passing the wound care class was one of my goals. Check!

Easy Spaghetti Squash

So, I have heard lots of talk about this stuff called spaghetti squash! I thought it would be a little complicated, but it was so easy.

1. Preheat oven to 400 degrees
2. Pierce spaghetti squash all over with a knife or fork
4. Place on pan with a rim
4. Roast for 1 hour, turning half way through
5. Let cool until able to handle
6. Cut spaghetti squash in half

7. remove seeds
8. Scrape with fork, easily comes out in strings

9. Enjoy with your fav ingredients!

I didn’t have much time tonight so we made Ryan’s fav… Ground turkey with sautéed mushrooms, bell pepper, zucchini, squash, and parmesan! Simple.

Bathroom Makeover!

This is my bathroom in the house and I absolutely love it now! We did quite a bit of work on it!

First phase: demolition!

The boys took out the old cabinets, beautiful pink toilet, large medicine cabinet mirror, paneling, and light fixture.

Second phase: painting and installation

The boys (Ryan & father in law) hung the sheet rock and all of that fun stuff. I don’t have details on this process.

My husband and I painted the bathroom “latte”. I think it’s a Benjamin Moore color. ($30)

Next my main squeeze put down vinyl tile with adhesive glue. We used the brand nafco for our tile. I forgot the exact pricing per square foot. I want to say $36 a box.

Now it’s time for installing the toilet and vanity!

We bought thus vanity and granite combo from surplus wear house. ($500) I love the antique white with the dark granite! (You may have noticed our cabinet hardware is missing… It’s waiting to be installed!)

My husband thought this toilet was neat because it could flush 21 golf balls. men…. I thought it was neat because it was not pink! ;)

They hung the light fixture! Much, much better!

My father in law has done electrical work in the past. They installed two outlets for me. Thank goodness! There was not a single one before the project! My hair is happy ;)

Finally the baseboards were put in place! ($25)

Third Phase: Finishing Touches

Now, this is my area!

I’m a huge Marshall’s and target fan. My little sister loves to go to garage sales and I like to go with her sometimes!

It really wasn’t too bad! I am soooo happy with the results! We did not do anything with our pink bath tub yet…. That’s still in the works. The shower curtain covers it nicely (Marshall’s-$14.99)
