Who says you can only start your yearly goal list on New Years!?

So, this past weekend I started thinking about a few things I ave been wanting to do the past two or three years. I decided it was time to stop thinking about them and time to start doing them!!

I have been running to get ready for my 5 mile race! I plan to run this with my brother in law and my awesome mom! It will take place Mother’s Day weekend :) A half marathon will be my next mission if all goes well!

I will be attending a wound care class in June!

I finally decided to take the jump and apply for a Nurse Practitioner program at USA! I started the application process this weekend! :)

My husband played tennis in college as well as a couple of pro tournaments. He has also coached since he was about 16. I decided to utilize my own personal coach and try out my skills! I am definitely a beginner but excited to try something new!

I have lost 10 pounds since February! I’m working to get back to 120! My pre wedding weight! 6 more to go :)

We have updated our house and I’m ready to have friends and family over for gatherings! I need to put all of those pretty wedding gifts to good use!! :)

It looks like the next year will be busy and exciting! I will update as progress towards my goals! :)

Bacon & Egg Cups

I had planned to take out some fish to bake for dinner. We always have some frozen fish since my dad is always fishing! Well, it didn’t look quite right so I looked at my Pinterest board to see what else I could try. Pinterest is my cook book! I didn’t have any thawed meat out so I decided to make one of our favorite “cuisines”, breakfast for dinner!

Bacon & Egg Cups

Ingredients

4 slices of turkey bacon (1 slice per cup)
4 eggs (1 egg per cup)
Pam or oil spray

Prepare
1. Spray muffin pan with Pam
2. Place one slice of bacon in a circle to line baking cup
3. Crack one egg into the center of the bacon (we had fresh farm eggs from my mom’s cousin)
4. Bake until desired consistency ( 425 degrees for 12-15 minutes was perfect for us!)

These are SO simple to make and they are fun. Try them out! The bacon did not turn out crispy but we still loved them! Let me know if you have any tips for more crisp bacon.

We enjoyed our Bacon & Egg Cups with a couple Pancakes! Yumo! Ryan was happy and full! :)

Seared Salmon with Mango & Kiwi Relish

I am trying out this recipe —Mango-Kiwi Salmon

INGREDIENTS

Salmon:
1 tbs Honey
2 tsp low sodium Soy Sauce
1 tsp Olive Oil
1/4 tsp Black Pepper
4 (6oz) Salmon Fillets
Cooking Spray

Relish:
1/2 cup diced peeled mango (about 1 mango)
1/2 cup cubed peeled kiwi (about 1 kiwi)
1/4 cup chopped fresh cilantro
1/4 cup fresh orange juice (about 1 orange)

Prepare:
1. Thaw salmon (I bought ours frozen at Walmart)
2. Mix honey, soy sauce, olive oil, and black pepper in a zip top bag or sealable container
3. Add fish to container and cover with marinade. Marinate 10-20 minutes, turning occasionally.

While the fish marinates, prepare the relish.

Mix the mango, kiwi, OJ, & cilantro in a bowl

1. Dice a mango- I cut the mango in half on either side of the hard pit located in the middle
2. Take one half of the mango and using a knife, slice a grid.
3. Pop the center out
4. Cut off the cubes!
Repeat with other half

Now you are ready to heat up the stove or grill!

1. Spray skillet with Pam or oil, heat grill pan or large non stick skillet over medium-high heat
2. Remove fish from bag and discard marinade
3. Add fish, cook 5 minutes on each side or until the fish flakes with a fork

I like to have a glass of wine while I cook. I think it makes me a better chef (;

Serve Salmon topped with mango-kiwi relish. We like to pair it with some delish veggies!

Nesting Tables: Antique Blue Makeover

They were perfect pieces for my latest project obsession! Ryan’s grandparents gave them to us when we moved into our first home. They are beautiful as is but I thought they could be even better! My mother in law worked with me on this project.

1. Make sure you have a smooth surface to work with. No cracking or peeling. Sand if needed.
2. Spray paint with Kiltz
3. Spray paint with any color (I love cream, turquoise, yellow, green)
4. Apply antiquing glaze (can be found at Lowes) with a sponge brush in small sections. Get it in all the nooks and crannies! That’s the best part!
5. Wipe off with cloth. I bought a 100 count bag of disposable cloths from lowes for a couple dollars.
6. I call this the detail step. Use your foam brush and lightly add detail to the edges and corners. I’ll need to post a video for this I think.
7. Check out your masterpiece!

Tip: mineral spirit can be applied to your cloth to help move the glaze or stain.

Go To Cajun Baked Chicken

I’m not the best cook, although I like to try lots of different recipes. I always love a simple go to dish!

Cajun Baked Chicken
1 whole chicken
1 stand or rotisserie pan
Tony’s season for taste

1. Preheat oven to 300 degrees F
2. Season the chicken with Tony’s. Layer it on!
3. Place on stand or pan
4. Bake for 3 hours
5. Enjoy Sha!

Side note: my mother in law inserts pats of butter just under the skin. It’s delicious!

My dad grew up welding and made us this stand. It has a hallow cylinder that you can fill up with water or beer (drunken chicken).

I like to serve our Cajun Baked Chicken with steamed veggies and sweet potatoes!

A Facebook friend posted this app one day and I’m so glad she did!! I looked into it online and it seems legit.

First download and register the app, then you’re ready! The first screen is where you swipe through to choose the charity you want to run for that day.

And then you hit the pavement! You can choose between walking, running, or biking. At the top of the screen there are options to choose time, miles, or impact.

The impact option allows you to see what you are donating to the charity you chose!! It’s a great app! I use it every time I run, along with my runtastic app :) Runtastic keeps more stats and it syncs with MyFitnessPal. Both apps help me stay on track with my weight and fitness goals!

Graffiti Run Houston, TX 2013

Meet Megan my best friend and Lance my brother in law! They live in Houston, TX. I love going to visit them. We found ourselves waking up Sunday morning quite groggy. We had a late night Saturday, making it difficult to rise and shine for our colorful 5K. We ended up making it!

We checked in and put on our free shirts! Megan chose to use hers as a cape.

Gotta love her. So Megan recently won first place in her age division for a half marathon. She is a bit faster than us. She made a pact to hang with lance and me during our little ol 3 mile run! So, each participant gets a free packet of color and you just have fun with it! As you can see, that was not a problem for us on that early Sunday Funday morning!

Thousands of people showed up of all ages! It’s a fun race, but we chose to time ourselves. As we ran along the course, we passed through color stations. A team of volunteers would colorize us with the color of their station! It was a fun mess! We held our breath because it was a big cloud of dust! I would advise buying the fun little sunglasses they sell. We were the second group to start. We finished the 5K in about 25 minutes. Lance & I were pleased! Megan still had lots of energy as always!

We definitely enjoyed it! Lance and I plan on bumping it up to a 5 miler mid May! We will see how that goes! Get up and go walk, run, or bike today! Anything to get moving and have fun! Register for a graffiti run near you!
